DAoC is a 32-bit app. It's not going to matter if you keep throwing RAM at it. It runs on Win7 like a champ. Vista is about to be officially unsupported by Microsoft (new IE will not run on Vista).
Win7 is the best OS they've ever made.
Just do it.

Make sure your motherboard will support more RAM and at the speed you expect it to run.
Windows 7, 64-bit Home Premium will support up to 16 gigs and that will be just fine (actually 8 gigs would manage well enough).
Motherboards will support the amount they say, but sometimes at a slower speed than they say or you might expect.
Ignore this strange post! DAoC runs great (with less than 8 GB RAM) on Win7 x64
