I haven't personally done it...I've driven the car while someone else did it though.
There was a guy that was pulling someone on an inner tube with his 4-wheeler in my neighborhood when we moved in...they went around a corner and the guy slid into a fire hydrant and hit his head on it, he died. But they were going pretty fast apparently.

as fast as those things whip around when you're on water, I wouldn't want to know what it would be like hitting hard surfaces without any ability to stop.

Yes, and we called it hooky bobbing back in the day as well, most often no sled either.
