Lol wut. Yeah it's a cyser technically. I made about 3.5 gallons.

And honey ferments completely because it's a simple sugar, just raising the alcohol % and barely adds flavor.

I used cotes de blancs wine yeast. It makes it dry but still leaves a lot of fruity flavor.

The amount honey used will dictate the residual sugar of a mead even more than the strain of yeast used. You didn't use much honey at all, so it ferments completely. The more honey you use, the sweeter and stronger it will be. If you would have used about 12.5 lbs of honey in that batch, you'd have a sweet mead with about 14-15% alchohol, using that Cote de Blancs yeast.

I wanted more of cider than a mead though, but just wanted to up the alcohol and volume a bit.

Tastes like apple cider, no honey flavor at all.
