Strong stuff.
Made with granny smith apples from the backyard, and 3 pounds of blackberry honey.
It's dry, sour, and still a little sweet. Perfectly carbonated.
I'm sure it's at least 10%. This summer when our red apple tree grows we're gonna make more, and that tree makes about 4x as many apples.

Technically, that's a mead. A cyser, to be specific.
Did you just make one gallon? 3 lbs of honey shouldn't be dry or sweet. This should equal a balanced mead.
What kind of yeast did you use?
