My mom makes it all the time so I thought I'd try it.... I made it way better than she does. hers are all mushy.
I sauteed it in olive oil and balsamic vinegar, its awesome.

My wife actually makes all veggies mushy on purpose. While I can eat them, luckily, I much prefer my veggies to be on the crisp side.

Oil, salt, pepper and lemon. Then grill it with some good quality parmesan on it.
