My mom used to make kraut. She'd keep it in the basement and the whole house would smell like kraut.  It's just not something I've ever been about to like.

I've always seen caraway seeds in my kraut. Would those be added during ferment, or for canning?

Hope you have a seperate building other than the house you can let the cabbage ferment in. God that stuff smells.

Would be interesting to try. Not sure I could get past the smell
