ive been doing great lately
keeping up on all my kungfu and qigong stuff. working like a mule lately too. its busy season
been eating meat like its going out of style. mostly pork because i fawking LOVE me some pork chops.

ive been feeling light and ready to run a marathon.
my sixpack is almost showing. if i flex a little its definitely there.


the scale says im at 198
granted its a cheapo one from kmart or something.

i was guessing more like 180.

dude, my pork chops melt in your mouth
theyre tender and juicy...
like eating puntang only with a much better flavor and smell.
i usually have a slice of bread with em to soak up the juicy juice left on the plate.

i am the pork chop fawking master.

my pork chops also melt. some people are afraid of pork and overcook it.

its easy to make soft pork chops if you buy it with the bone still on it.

Season them and wrap them up in tinfoil. Cook them in the oven.

(This is one of my favorites for pork steak, Boston butt (shoulder), etc

Season the meat, sear it in a pan and then cook it off in a steamer kettle. Man, you'll go NUTS for that stuff and it will fall apart.

(about 4-5 hours for the shoulder, less for the smaller cuts)

cooking anything with aluminum foil will give you old-timers disease.

medium heat maybe a notch past medium (varies depending on the stove)
well cured skillet
little bit of bacon grease
cook till the meat is firm but tender to the touch.

i buy big fat chops with the bone and usually go about 6 or 7 min on the first side, till the fat is coming out kinda thick and slimey looking.
then flip it and cook it till the meat is firm but soft. it should feel like the chop you want to sink your teeth into, not like a leather shoe.
for butterfly chops or thinner ones with no bone, whatever, its just a matter of adjusting your time


i really like blackened chops

lately ive been doing a dash of cayenne with some lemon pepper seasoning and a coating of plain toasted bread crumbs with some olive oil in the pan with that dab of bacon grease
try mixing bread crumbs with corn meal.... that will even give baby jeebus a boner
