pork-loin sweet potatoes and apples!

Making a pork-loin and a small ham with apples and sweet potatoes, sweet corn bread (W/bananas in it.),spinach,corn on the cob and armadillo eggs (jalapenos filled with cream cheese ,encased in breakfast sausage and fried in a crispy coating.mmm)2 more hrs!

I am trying to picture "jalapenos filled with cream cheese ,encased in breakfast sausage" and that isn't happening.
How does one 'encase' like that?

Do you allow substitutions? That sounds fkn fantastic except that I am not much of a fan of sweet potatoes! I'd takd some russets or red potatoes or yukon golds, hell even regular white potatoes over sweet potatoes - just never got a taste for them.

I like my sweet potatoes with a little bit of butter and some cinnamon. I'd never thought to add apples but that sounds good!

Just pack it around the pepper,I like it pretty thin some people put a lot of sausage
like the bottom pic (also made with cheddar instead of cream cheese)
