I'm using my Weber to smoke with for the first time. I've got a remote temperature probe snaked up through the bottom vents and connected to the transmitter outside the box. That way I can monitor the temperature remotely while I'm working around the house or playing star wars.
I think 220 should be the temp. Think I can control it by closing the top air holes.

275º to 325º. You don't want to get sick and you want to render the fat. Keep a spray bottle with apple juice in it to spritz the chicken. Of course, the professional meat smoker has already told you wrong so will try to correct me.
If you want perfect chicken you should brine it 24 hours then overnight marinade it in Italian Dressing. Then pat it dry (all of this after trimming fat) then spray it down with Pam or rub olive oil on it. Then rub it with spices even under the skin where loose. Put it on the smoker skin side up with the skin nicely wrapped. Smoke it for an hour then turn it. Smoke it another hour then spritz and tun again. Spritz it about every 15 minutes cooking another hour to hour and a half. Turn it. Baste with BBQ sauce. cook till a nice glaze is on it. Turn and baste with BBQ again then cook until a nice glaze is on it and remove.
It should have rendered all the fat. You can bite thru it like a biscuit now and the bone will be white and not grey.

Chicken thighs should be smoked at between 220-250, on the high side of that in my opinion. When I worked at a place that served smoked chicken years back, they set their smoker up at between 240-250 and it came out delicious. Same thing for their turkey.
