Apparently tripe stinks while cleaning and cooking because there's usually still some bits and remnants of undigested food still in there...gross.
The one time I recall seeing someone eat tripe it looked like flat honeycomb, like this:

An ex of mine used to cook it with delight. She did a pretty good job of it. It didn't particularly grab me as something to order in a restaurant though.
