There is no way that it's poop.

First... if it was an official job of some kind the suit would look more like this:


Second... where would an average person find that much poop to be able to submerge themselves in it?


Though he is wearing a rubber suit of some kind, I would say that it's either colored/thickened water or lumpy chocolate of some kind.
