Depends but usually a combination of a great guitar part + infectious rhythm + awesome lyrics does it for me. There are exceptions, however...just about anything that gives me goosebumps, I would say, will generate a "F*** YEAH!" from me.

For instance:

- Beethoven's Ninth Symphony, Fourth Movement ("Ode to Joy"
- Led Zeppelin - Stairway to Heaven, the killer awesome guitar solo + the finish gives me chills every time
- Queen - We Will Rock You, again, unforgettable guitar solo
- Beastie Boys - Sabotage, I just love the intro to this song

Depends on the genre.

Rap, I need anger. Nas Hate Me Now kind of anger. Lil Wayne Drop The World type of anger.
Rock, I need a good guitar and very good vocals with passion.
Classical, hard to explain. It needs to build up to an emotional high from a low point.
