I make curries now, copped a great curry cookbook a few months ago from the Smithsonian gift shop no less.

I am already creating my own, my fav so far I have created is a Masman with some Thai Green in it for heat. I also like to add some non traditional vegetables. Carrots add some natural sweetness so I can forgo the sugar, asparagus is good too, great when I catch it on sale. I also like putting in Avocado along with some crushed peanuts, as long as I put the avo in right before serving so it isn't mushy.
