ALWAYS better the next day...though me and pops make a mean pot roast and chili and it really tasty the same day.

Here is a cooking trick.
If you want to make really good home fries, you have to bake the potatoes and then put them in the refrigerator.
Let them sit for 24-36 hours.
Only then cut them up and pan fry them with onions etc.
They taste a TON better if they sit for that day to day and a half than if you bake them then use them the next morning or bake them then make them.
