It all depends on how you cook it. All the non-standards can be ruined really easily.
Best bet is trial and error; google some recipes for duck, quail, pheasant, and Cornish hens. If it turns out awful, make it into soup.
I really hate the recipes that call for very rare duck though. Poultry just isn't meant to be rare.

Whenever I watch a cooking show and they have a duck dish, and it's all cooked except the middle that looks raw, that just turns my stomach.
I LOVE duck, plain ol cooked, peking style, or crispy fried.
