We were talking about Basque separatists in class and I got to wondering if what they're actually going for is an autonomous Navarrese kingdom/state like what existed before the formation of Spain.

I've played that game countless times and I've never tried playing Castille or Aragon before. 
I tend to go for a OPM. Byzantium is my favorite, although that country has two provinces at the start of the game. Of the larger nations, I've played Austria and Bavaria multiple times. They can both be very fun.

I almost always play as Poland, it's tough at first with the Golden Horde at war with you from the outset, but if you can keep Lithuania happy for a few years and get a marriage or two with them...you can easily absorb their 16 provinces and go on to rape all of central Europe than turn your attention to the Golden Horde.
Castille is a very easy game if you start with them. It's nice for a quick game where you can play with a lot of things that you don't have as much access too with other nations, like a lot of available colonists and tons of money.
