Or do we just enter the key into our accounts and start playing?

This essentially. If you bought it online at the Blizzard store, you will have downloaded it and be ready to go immediately when the server's switch is flipped at midnight PST. If you buy a box you'll have to install and probably download a mild sized patch before being able to play. (But you still won't be able to play until midnight PST.)
