There are a couple different specks in pepperoni. The ones with the black ring around them are whole peppercorns that are obviously sliced when they slice the pepperoni. The whiter spots are fat.

ahh ok peppercorns. while growing up i did not eat much meat, so never knew what that was. i always thought it was specs of dirt or something, since it was a cheap/fatty meat. lol.
