I'm not sure what to think of the lemon pepper and lemon juice or why they would add water to the beef. Also, flipping to a different side of the grill seems....silly. I've never heard that before. The rest sounds pretty good, though.

Flipping to another side of the grill is to make sure the grill is hot so you get the max sear on your meat I do this.
