Like if you're robbing a shop and someone jumps out the window to escape and hits their head and dies. Even though the robber didn't intend to kill the guy that counts as a murder right?

What's that rule called and what are the particulars of it?

You are probably thinking of felony murder although your example is not an ideal one. The more typical situation is like when the cops shoot an innocent person trying to hit the bank robber or something like that.

Uhm, yes actually, it is an ideal example of a felony murder.

It's not a great example. It's the sort of thing felony murder encompasses but isn't really designed for.

Another bad example would be someone tries to rob someone on the street and their dog gets panicked and runs into the street, causing a car accident which kills someone.

Both fall within the felony murder rule but neither are great examples of what motivates it. Felony murder covers situations where people react to a crime by doing things that don't normally result in death but happen to for some reason or another, but that isn't really why it exists.
