I want to get an AC Unit for my office. It's like 250 Square Feet max. I have the option to vent the hot air into the attic by removing one of the ceiling tiles. Anyone have any suggestions for something that'll keep things cool and last for awhile?

It that the only option? Because the attic is not a good place to add more heat.

Unless I want to punch a hole into the side of the building... yes...

There's no windows anywhere in the back half of the office... and all the windows in the rest of the office do not open.

AC units not only pump heat but they also pump moisture. That hot air will be moist. You vent it to the ceiling you could end up with mold issues.

Looked into a Mitsubishi Slim Ductless one? One small hole in the upper wall and done.

Even those have to drain, but, you can drain it into a bucket and pour it out.
